Herbal Cookies

During our celebration of Beltane in Zagreb, I had the opportunity to try some wonderful cookies which were made by our Priestess using the herbs from her very own garden and with a lot of love. :) You may know her under the pen name Green and by her blog Naudi Nikome (Harm None). The blog is wonderful, as is its founder, but it is in Croatian but Green has just started translating it into English so you may be able to read some of her posts. But since she doesn't have a culinary section on her blog, I asked her to give me her recipe so I can share it with you. Perhaps you get the chance to try it out at some point in the future. :)


I think that this is a very simply and quality recipe that you will enjoy...so here's the secret to it. :)

You will need:

  • 100g butter
  • 3 egg yolks
  • 90g powdered sugar
  • 1 baking powder
  • 150g flour (mix together half plain and half hard flour or you can use self-rising flour)
  • 1 handful finely chopped herbs of your choice (preferably fresh herbs but if you don't have that then you can use dried herbs too) - she used mint and sage in her cookies

How to prepare:

  1. Leave the butter out at room temperature so it softens up (I sometimes even melt it a bit in the microwave in order to get things done faster) and cut it into smaller pieces so it is easier to mix in.
  2. Mix all the ingredients together until you get a compact mixture.
  3. Roll out the dough and cut it with cookie forms/molds or simply use your hands to make them into a circular shape.
  4. Heat up the oven to 180°C.
  5. Put them on the pan but make sure to leave a few centimeters between each one since they will rise while baking and you don't want them to stick together. Also, I recommend you put baking paper on your pan and then put the cookies on the baking paper.
  6. Bake cookies for 5-10 minutes (note: they mustn't turn too golden-brown. When you get them out, they will still be quite soft but they will harder up a bit when they cool down).
  7. Enjoy! :D
This would be the whole recipe believe it or not. :) As for me, you can expect a nice recipe for an oatcake I found soon enough.
